2 cups Rice Flour or Quinoa Flour (or any kind of gluten free flour of your choosing as long as it adds up to 2 cups)
2 tsp. Baking Soda.
2 tsp. Cinnamon.
2 Grated Apples.
2 Grated Carrots.
1/2 cup Coconut.
2 Bananas (mashed).
1/2 cup Zucchini (optional).
3/4 cup Olive Oil.
1/2 cup liquid (for example: apple juice, buttermilk, milk, rice milk).
2 tsp. Vanilla.
-In a large bowl, combine flour, baking soda and cinnamon.
-In a medium sized bowl, combine remaining ingredients.
-Add wet ingredients into dry ingredients and mix.
-Preheat Oven to 350 degrees.
