This fresh salad is easy to throw together and perfect served as a light starter for a Sunday Brunch.
For the marinade
For the dressing
1. Cut the cucumber in half lengthways and scoop out the middle, then cut into 1 inch half-moons.
2. Toss the cucumber, watermelon, olives, pitta, rocket and feta with the olive oil and lime.
3. To make the dressing, simply whisk all the ingredients together and season with salt and pepper.
4. To serve, divide the salad between the plates and drizzle over the dressing sparingly (you will probably have some left over).

Combine the chicken and vegetables in a bowl with the warm water and let sit for 12 minutes. Drain excess water from the mixture. In a hot skillet, add the oil and chicken mixture and cook on high until browning occurs. Season with the spices and squeeze lime juice on to finish. Taste and adjust seasoning as needed.
